Finger Lime

The finger lime is a native Australian citrus from the rainforests of northern NSW and south east Queensland. Its finger shaped fruit is packed with tiny juice pearls, often called lime caviar, that burst with a sharp, fresh lime flavour. Chefs use them on seafood, in drinks and on desserts.

It is a dense, thorny shrub or small tree that grows well in the ground or in a large pot. It copes with part shade better than most citrus, though it fruits best with some sun. Give it soil that drains well, regular water and a citrus fertiliser. Fruit ripens from late summer into autumn.
